One of my all time favorite bloggers, The Londoner, always posts the most amazing recipes. Now I have never been one to cook, but when I found this gem on her blog I knew I had to try (especially with no more on campus meal swipes). It’s called one-pot pasta, a recipe she snagged from the legend, Martha Stewart. This was my second time trying the recipe, and despite my best efforts (turning the heat on high instead of low to simmer, skimping at the store and going without basil, etc.), it still turned out delicious! (The first time Joe and I made it with all the ingredients and it was absolutely heavenly.)
My favorite part of this recipe is that you essentially put it all in a pot and let it set there. It’s perfect for busy nights when I don’t have an hour to tend to dinner. I highly recommend you give a try, and check out The Londoner’s other recipes as well!
Ingredients used:
Enough spaghetti to fill the bottom of the pot (leftovers for lunch!)
About 1/2 cup chopped cherry tomatoes
1/2 white onion chopped
2 cloves of garlic chopped
2 cups of vegetable stock
Ingredients recommended but not pictured:
2-3 sprigs of basil
Parmesan to top it off
Extra ingredients (too fancy for college student Kate):
2 tablespoons of olive oil
1 teaspoon dried oregano
Chili flakes
Salt + Pepper
